I found this Marriott Travel Brilliantly concept for co-creating the future of travel with customers very inspiring.  See for example how one customer’s idea, Healthy Vending Machine, was evolved by Marriott:

“Having a Vending Machine with alternatives to carb filled, chocolate covered snacks could be a niche that needs filling. Finding affordable, safe, and healthy food is often difficult. Combined with the unpredictable schedule of a traveler, having a dependable source of actual nutrition would be a bonus. Examples: olive snacks, dried fruit, air popped popcorn, etc. Including organic foods or partnering with an established company that sells healthy foods might be a good option.”
